You know the drill. Come fall time, everything that could possibly become pumpkin flavored, suddenly does. And this recipe for slow cooker pumpkin steel cut oats is no exception. That's right. This steel cut oat pumpkin oatmeal recipe is prepared in a slow cooker, allowing you to set it before you go to bed at night, so that you can wake up in the morning to the wonderful aroma of what smells like warm pumpkin pie.
There are few things that are better than having a healthy, hearty, and really delicious breakfast waiting for you in the morning with no effort from you. All the preparation happens the night before, and even then it will only take you a few minutes to throw all of the ingredients into the slow cooker for overnight cooking.
Make sure that you are using steel cut oats, and not mistaking them for regular rolled oats. Steel cut oats are less processed and are thicker, needing the extra cooking time in the slow cooker.
The cooking time takes about 8 hours. So, if you are getting your good 8 hours of good sleep at night, turn on the slow cooker right before bedtime, and enjoy breakfast first thing in the morning.
Ingredients
- 1 1/2 cups steel cut oats
- 1 cup pumpkin puree
- 1/2 cup unsweetened applesauce
- 3 cups water
- 2 cups almond milk (or lowfat dairy milk if preferred)
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- For Garnishing:
- Extra milk
- Raisins
- Chopped nuts
Preparation
1. 8 hours before you plan to eat the oatmeal (before bedtime), prepare the oatmeal. To do this, spray the inside of your slow cooker with non-stick cooking spray. This step is very important since this oatmeal is known to cook onto the sides of the slow cooker. It becomes rather difficult to clean to slow cooker if this happens!2. Next, to the slow cooker add the steel cut oats, the pumpkin puree, the water, almond milk, pure maple syrup, vanilla extract, ground cinnamon, salt, ground cloves, and ground nutmeg.
Use a large spoon to stir all of the ingredients together until they are uniformly mixed.

Set the slow cooker to low, and cook the oatmeal overnight, for about 8
hours. You may want to keep a close eye on the oatmeal towards the end
of the cooking process the first time you make it as all slow cookers
cook a little bit differently and you do not want the ended of your
oatmeal to burn.4. When finished, ladle the oatmeal into individual bowls and top with additional milk, a few raisins, and chopped nuts if desired.
