Tip: If you're short on time, opt for quick-cooking oats, which cook in about 1 to 3 minutes. And if you're enjoying a leisurely morning, steel cut oats (aka Irish oatmeal or Scottish oats) -- which take about 30 minutes to cook -- are a real treat.
Ingredients
- 1 cup rolled oats
- 2 cups water
- 1 teaspoon ground ginger
- 1/4 cup golden raisins
- 1/4 cup chopped dried tart apricots
- 1/4 cup slivered almonds
- 1/4 cup pure maple syrup
- Milk, soy milk, or almond milk for serving (optional)
Preparation
1. Place the oats and water in a medium, heavy-bottomed saucepan. Bring to a boil over medium-high heat, then reduce heat and simmer, stirring occasionally, until oats are cooked, about 5 to 8 minutes depending upon desired consistency. Stir in the ginger, then remove from the heat.2. Ladle the oatmeal into 4 bowls. Top each serving with 1 tablespoon each raisins, apricots, and almonds. Drizzle with 1 tablespoon of maple syrup.
